Update: I tried a lot of different.zip files (e.g. "Gibbs-Gibbs.zip", "Gibbs-Gibbs.part1.zip", "Gibbs-Gibbs.part2.zip", etc.)
But the problem is the same - the files are too large, so it stops halfway and doesn't extract any more.

You can create a 7-Zip archive of only the.part files, then extract them.
7z a -tzip -mx=9 -r *.part Gibbs-Gibbs.zip
7z e Gibbs-Gibbs.zip

It appears you have some problems with your hard drive.
Its size is 14.5 TB (14,564 GB).
It has only 1 partition.
The archive contains 1 file folder Gibbs-Gibbs_Part1 and 2 x file folders Gibbs-Gibbs_Part2.
So if you download everything from the link you posted you have many problems.
Why?
Because you don't need the full archive.
You only need the file folders.
You only need the files inside the folder Gibbs-Gibbs_Part1.
You only need the files inside the folder Gibbs-Gibbs_Part2.
If you check those folders you will see that all the files are between 70 and 200MB in size.
If you want to access the files inside those folders without having the problem that 7z stops at 4GB (because you have to delete the part file folders to make room for the extracted files) you need to create an archive where the files don't exceed 4GB.
You have two options:
Compress all files with 7z and create an archive with the file folder Gibbs-Gibbs_Part1 and Gibbs-Gibbs_Part2.
Compress all files with 7z and create an archive with only the files inside the file folder Gibbs-Gibbs_Part1.
